Sicilian Orange Almond Cake

Preheat oven to 350F; prepare 9” round tin pan with oil.

1 ¾ cup almond flour

½ tsp salt

2 tsp baking powder

½ tsp baking soda

1 ¾ cup white sugar

3 eggs

150 mls vegetable oil

150 mls orange pulp (from 1-2 oranges)

Orange zest

1. Prepare orange pulp:  After washing the oranges well, boil them until soft.  Cool, slice, and mix in blender until liquid pulp.

2. In large bowl, blend eggs, oil, sugar, zest and pulp until smooth.

3. In small bowl, combine dry ingredients.  Then, add in thirds to wet ingredients. Combine.

4. Pour into tin pan, bake for 30-40 minutes, until center comes out clean.

5. Cool, and enjoy with whipped cream or sour cream.
